Orappam

Orappam is such a tasty and yummy snack...i love this...This is  a famous sweet in my place..



Ingredients:

Roasted rice flour:3 cups (idiappam flour)

Jaggery:2 cups

Cashews:10 - 15

Coconut milk:3 cups

Eggs:3

Cardamom powder:2 tsp

Ghee:3 tbsp

Use only fine idiappam flour for making orappam.

Take a pan and add about 1.5 cups of water in it...

Crush the jaggery in this and mix well.

Let this boil over..

Strain and keep this aside..

Take a bowl and beat together the eggs one by one until light anf fluffy..

To the eggs add in the roasted rice flour and mix well..

Heat a heavy bottomed large pan and add in 2 cups of water,coconut milk,cardomom powder and ghee fried cashews..

Add in the egg mixture and the strained jaggery water and mix well..

Cook on medium flame..

Keep on stirring..

Once the mixture starts leaving the pan,add in ghee or dalda..

You will get a browned halwa..

Keep the pan closed for atleast 20 minutes...

Transfer this to a greased plate..

Let this set..

Then cut in to desired shapes and enjoy!!
