Banana kesari - Banana rava kesari

Banana kesari is a simple and yummy dessrt that can be made very easily..



Ingredients:

Ripe banana:1

Rava:1 cup(sooji or semolina)

Sugar:1 cup

Milk:1.5 cups

Cashews:few

Cardamoms:few

Ghee:1/4 cup

Food colour:a pinch

Preparation:

Mash the ripe banana and keep it aside..



Take pan and keep it on medium heat..

Pour little ghee and fry the rava for a few minutes...

Now pour the milk to the rava and stir well...

Add in the sugar and mix well..

Now add in the mashed banana...

Keep on stirring on medium heat...

Add in the food colour and mix well...

The mixture will thicken slowly..

Add in the ghee fried cashews and cardamoms...

Add in the ghee when the mixture starts to leave the sides of the pan..

Transfer to a greased plate and let it cool...

Enjoy the banana kesari!!

Milk burfi - Milk sweet

Milk burfi is easy to make and tastes heavenly..Here are step by step pictures that can be easily followed..Enjoy making the milk burfi..Milk burfi is one of my dear favorites..
Ingredients:
Milk:2 cups
Sugar:2 cups
Milk powder:2 tbsp
Rava:2 tbsp(sooji)
Cardamom:few
Cashews:few
Preparation:
Take milk in a non-stick pan and boil it..
Reduce the flame and keep on stirring..

Meanwhile ghee fry the rava and add to the boiled milk and stir well..
Once the milk reduces in volume,add in the milk powder and sugar and mix well..

Keep on stirring..
Do the stirring only on medium heat..
Do not increase the heat..
The mixture will thicken little more..
Then add the cashews and keep on stirring..
Once the mixture starts to leave the sides of the pan reduce the heat further and stir well..

Grease a plate and transfer the contents to the plate..

Once the burfi cools down,slice in to pieces..

Milk burfi is ready!

Chicken liver fry - Spicy chicken liver fry

Chicken liver fry is a delicious treat for people who relish liver..It makes a yummy dish..
Ingredients:
Chicken liver:1/4 kg
Vegetable oil:2 tsp
Onion:1,small,chopped
Cumin powder:1/2 tsp
Yoghurt:1 cup
Ginger:1/2 tsp,powdered
Salt to taste
Preparation:
Take a frying pan and heat it on medium flame..
Fry the chopped onion until golden yellow..
Add the chicken liver and fry till they become firm..
Add the garam masala powder,salt,powdered ginger and cumin powder and fry again..
Stir in the yoghurt and cook for few more minutes..
Tasty and spicy chicken liver is ready!

Pear delight

Pear delight is a easy to make pear dessert...
Ingredients:
Pear:1
Fresh yoghurt:1 cup
Honey:1 tbsp
Dark brown sugar:1/2 tbsp
Water:3 tbsp
Raisins:1 tbsp
Preparation:
Take a bowl and pour the yoghurt in to this..
Beat the yoghurt well with honey till it gets creamy..
Heat sugar in a pan along with the water and raisins and keep on stirring till it becomes a thick brown liquid..
Add this prepared brown liquid to the beaten yoghurt and mix well..
Cut the pear in to rounds of ½ cm thickness..
Microwave them for 2 minutes…
Now transfer the pear rounds on to a flat dish and pour the yoghurt on these pear slices..
Chill in the refrigerator for 30 minutes and serve!

Tomato paneer pulao

Tomato paneer pulao makes a yummy one pot meal..As this pulao contains paneer,kids also will love this..
Ingredients:
Basmati rice:1 cup
Curd:2 tbsp
Paneer:200 grams,cubed
Green chillies:2,slit
Onion:1,large,chopped
Tomato puree:3 tbsp
Ghee:1 tsp
Oil:1 tsp
Coriander leaves: a bunch,chopped
Cashews:few
Raisins:few
Preparation:
Clean the basmati rice in water and soak for 20 minutes..
Drain the water and keep the rice aside..
Take a pan and add the ghee and oil…
Fry the chopped onion till light brown..
Then add the ginger-garlic paste and fry followed by the slit green chillies..
Add the paneer cubes and tomato puree and mix well..
Then add the curd..
Add little garam masala powder and chopped coriander leaves..
Add the rice without water and fry the rice along with the masala..
Then add 2 cups of water and salt and mix well..
Transfer the contents to a pressure cooker…
Keep it covered and wait for the first whistle..
Keep on low flame for 5 minutes..
Wait for another 5 minutes and then open the lid of the pressure cooker..
Add the ghee fried cashews and raisins..
Tasty tomato paneer pulao is ready!

Mutton masala

Mutton masala is a great side dish and is best served with naans..
Ingredients:
Mutton:1/2 kg
Onion:1,sliced
Coriander seeds:1/4 cup
Red chillies:4
Grated coconut:3 tbsp
Pepper corns:4
Cinnamon stick:2 cms
Cloves:4
Ginger-garlic paste:2 tbsp
Coconut milk:1/2 cup
Oil for frying
Preparation:
Heat oil in a pan and fry the sliced onion..
Cool the fried and sliced onion..
Grind in to a paste in mixer..
Clean the chopped mutton well…
Marinate the mutton pieces with ginger-garlic paste and keep this aside..
Now take a pan and fry the coriander seeds,pepper corns,cinnamon stick,cloves,red chillies and grated coconut…
Let this cool down..
Now grind this to a fine paste along with little water in a mixer..
Now take the marinated mutton pieces and shallow fry these pieces in little oil..
Then add the ground masala paste and let this fry for a while..
Add the onion paste,coconut milk and water to cook the mutton pieces…
Add salt to your taste..
Let this masala simmer for a while..
Remove from heat..
Serve with hot paranthas or naan!

Moong dahi pakoda - Moong pakoda in curd

Moong dahi pakoda is a yummy and healthy version of pakoda..Tastes awesome when served with yoghurt...
Ingredients:
For pakodas:
Whole moong dhal:1 cup
Ginger:1 inch
Green chillies:3
Big onion:1,large,chopped finely
Salt to taste
For dahi(curd) base:
Curd:1 cup
Red chilly:1
Mustard seeds:1 tsp
Cumin seeds:1 tsp
Curry leaves:few
Salt to taste
Preparation:
Soak moong dhal for 2 hours and grind with ginger,green chillies and salt..
Grind this to a coarse paste..
Now add the chopped onion to the batter..
Make small balls out of this batter..
Now heat oil in a pan..
Now deep fry these balls in this hot oil…
Keep them on a plate..
For the curd base:
Take a small bowl and pour the curd in to it..
Beat the curd in to smooth paste..
Add salt to it..
Now heat little oil in a pan…
Add red chilly,mustard seeds..
Once the mustard seeds splatters,add the cumin seeds and curry leaves..
Add this to the curd base and mix well..
Pour the dahi base over the pakodas…
Yummy and tasty pakodas are ready!
Enjoy the pakodas with the curd!

Thank you all for sending in yummy snacks recipes last month..So go ahead and take a look..Make use of those recipes and make your kids happy this summer!

For the month of may,i have decided to host icecream recipes..Kids love icecreams ofcourse and to beat the summer heat,we can all treat ourselves with icecream!!The event will be open from may 1st to 31st..

The recipe must be homemade..The icecream can be a softy icecream or a sorbet.It can be eggless or with eggs..It can be made with any fruit also..

Hare bhare mutton chops - Mutton chops

Mutton chops make a great side dish with biryani..These mutton chops have been prepared with coriander and green chillies paste..
Ingredients:
Mutton:1 kg,chopped
Oil for frying
Eggs:2
Bread crumbs:1/2 cup
For marinating the chopped mutton:
Coriander leaves:100 grams
Green chillies:8
Salt to taste
Preparation:
Clean the chopped mutton pieces well and keep them aside in a large bowl..
Chop the coriander leaves and green chillies..
Now put together the chopped coriander leaves,green chillies,salt and ginger-garlic paste in a mixer and grind to a fine paste..
Now using this marinade,marinate the mutton chops for about 2 hours..
Pressure cook the marinated mutton…
Once the mutton is cooked,heat a pan on medium flame..
Transfer the cooked mutton chops to this pan and fry till the moisture disappears..
Then remove the pan from the heat..
In another bowl mix together the eggs and ass little salt to it..
Place the bread crumbs in another bowl..
Now coat the mutton chops with the egg batter and then roll in the bread crumbs..
Now deep fry in hot oil..
Yummy hare bhare mutton chops are ready!!
